Tilapia Breakfast Sandwich
WITH HARISSA SAUCE
This delicious breakfast sandwich is sure to kick-start your morning. North African harissa paste adds a unique twist to this classic morning meal.
COOK FISH: Cook Morey’s Tilapia Seasoned Grill Fillets according to package directions using the baking method.
COOK EGGS: In large skillet set over medium heat, add oil. Crack eggs into skillet and cook for 2 to 3 minutes or until starting to set. Flip and cook for 2 to 3 minutes or until eggs are set to desired doneness.
PREPARE SAUCE: In small bowl, stir together mayonnaise and harissa paste.
TO SERVE: Divide tilapia evenly among four English muffin halves. Top with lettuce, tomato, and fried egg. Drizzle harissa-spiced mayonnaise evenly over eggs and top with remaining English muffin halves.
PRO TIP: For added indulgence, melt sliced sharp Cheddar cheese over eggs just before removing from the skillet.

- 1 tsp. vegetable oil
- 4 eggs
- 1/2 cup mayonnaise
- 2 Tbsp. harissa paste
- 4 English muffins, split and toasted
- 2/3 cup shredded iceberg lettuce
- 1 small tomato, sliced
