Flounder with Spring Salad

This Flounder with Spring Salad brings together the Morey’s Wild Flounder Garlic Herb with a fresh and vibrant mix of spring vegetables. Perfectly complemented by a tangy lemon hummus and lemon zest for a light and refreshing dish.

Preparation Instructions

1. Preheat the oven to 375 degrees. Prepare the flounder according to package directions and bake in the oven until cooked through.

2. To make the spring salad, slice the zucchini into rounds and drizzle with 1 tbsp of olive oil. Add to a bowl along with lima beans, sweet peas, snow peas, remaining olive oil, lemon juice, salt and pepper. Mix to combine.

3. Divide the lemon hummus and spring salad between two plates. Place flounder pieces atop hummus. Top with lemon zest and more fresh pepper and enjoy!

  • 1 pack of Morey’s Wild Flounder Garlic and Herb (2- 5 oz filets)
  • 1 thin zucchini
  • 2 tbsp olive oil, divided
  • ½ cup lima beans, blanched
  • 1 cup sweet peas
  • 1 cup snow peas, blanched
  • 1 tbsp lemon juice
  • ½ tsp salt
  • Freshly ground pepper
  • ½ cup Lemon Hummus
  • Lemon Zest from one lemon
