How to Make
1. Preheat the oven to 375 degrees. Prepare the flounder according to package directions and bake in the oven until cooked through.
2. To make the spring salad, slice the zucchini into rounds and drizzle with 1 tbsp of olive oil. Add to a bowl along with lima beans, sweet peas, snow peas, remaining olive oil, lemon juice, salt and pepper. Mix to combine.
3. Divide the lemon hummus and spring salad between two plates. Place flounder pieces atop hummus. Top with lemon zest and more fresh pepper and enjoy!
